Deze worden vervolgens in rijststro gewikkeld. Degene die daarin zit <em>bacil subtilis<\/em> (ook wel hooibacil genoemd; gram-positief, ana\u00ebroob groeiend) zorgt voor de fermentatie van de gekookte sojabonen, waardoor onder meer nattokinase ontstaat.<\/p>\n\n\n\n<p>Tijdens de fermentatie wordt ongeveer 124 maal de hoeveelheid geproduceerd <em>Vitamine K2<\/em>, verdere vitamines uit de <em>Vitamine B-complex<\/em>, het fibrinolytische en amylolytische enzym dat tot de serineproteasen behoort <em>Nattokinase<\/em>, antibacterieel tegen Escherichia coli en Helicobacter pylori <em>Dipicolinezuur<\/em>, het polysacharide <em>Levan<\/em> En <em>ammoniak<\/em>, waarvan het gehalte om smaakredenen niet groter mag zijn dan 0,2 %.
