Om v\u00e4rdet \u00e4r h\u00f6gt indikerar det h\u00f6g oxidation och l\u00e5g oxidativ stabilitet hos oljan; om det \u00e4r l\u00e5gt betyder det god stabilitet och l\u00e5g oxidation.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Wie_berechnet_sich_der_TOTOX-Wert\"><\/span>Hur ber\u00e4knas TOTOX-v\u00e4rdet?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>V\u00e4rdet ber\u00e4knas utifr\u00e5n tv\u00e5 v\u00e4rden:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>peroxidv\u00e4rdet (POZ - m\u00e5tt p\u00e5 inneh\u00e5llet av funktionella grupper av prim\u00e4r peroxid i ett fett eller en olja)<\/li>\n\n\n\n<li>anisidintalet (AnZ - m\u00e5tt p\u00e5 inneh\u00e5llet av sekund\u00e4ra \u03b1,\u03b2-om\u00e4ttade aldehyder i fetter och oljor)<\/li>\n<\/ul>\n\n\n\n<p>Formeln \u00e4r kort och koncis:<\/p>\n\n\n\n<p class=\"has-text-align-center\"><strong>TOTOX = AnZ + 2 x POZ<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Aussagekraft\"><\/span>Betydelse<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Att enbart beakta TOTOX-v\u00e4rdet, utan k\u00e4nnedom om de enskilda v\u00e4rdena AnZ och POZ, \u00e4r inte anv\u00e4ndbart f\u00f6r att bed\u00f6ma f\u00e4rskheten och den oxidativa stabiliteten hos respektive \u00e4mne.<\/p>\n\n\n\n<p>Medan olivolja har ett ganska h\u00f6gt anisidtal p\u00e5 cirka 24 och fortfarande m\u00e4rks som f\u00e4rsk (p\u00e5 grund av det naturliga inneh\u00e5llet av polyfenoler), skulle en annan olja med ett identiskt AnZ-v\u00e4rde klassificeras som f\u00f6rst\u00f6rd.<\/p>\n\n\n\n<p>Bortsett fr\u00e5n olivolja har en olja eller ett fett som kan betraktas som f\u00e4rskt vanligtvis AnZ-v\u00e4rden p\u00e5 1 ... 3, i alla fall &lt; 6.<\/p>\n\n\n\n<p>POZ-talet \u00f6kar med \u00f6kande oxidation, dvs. ju l\u00e4ngre oljan uts\u00e4tts f\u00f6r atmosf\u00e4riskt syre. Den ursprungligen b\u00e4sta oljan kan d\u00e4rf\u00f6r \"f\u00f6rst\u00f6ras\" enbart genom l\u00e5ngvarig exponering f\u00f6r atmosf\u00e4riskt syre. Helst b\u00f6r alla produktionsprocesser ske i fr\u00e5nvaro av syre, t.ex. i en kv\u00e4veatmosf\u00e4r.<\/p>\n\n\n\n<p>Det anger hur m\u00e5nga peroxidbundna atomer som finns i mmol per kg olja eller fett. Det b\u00f6r noteras att en peroxidgrupp alltid har 2 syreatomer.
